Besan Masala Roti

Besan Masala Roti is a complete Indian staple diet using dough of Besan, atta, and lots of ghee. It is a kind of Indian bread popular in Haryana. Many other ingredients used in the making of the dough includes cumin powder, red chili powder, coriander powder, and amchur for the added taste and flavor. The Roti is best with Sabzi or Raita.

Kadhi Pakora

The gravy of kadhi Pakora is made with sour yogurt and the thickening is done with gram flour. It is similar to many parts of India but the specialty lies in the fried fritters, also called the Pakoras dropped in the gravy. The Pakoras make it a perfect Indian homemade comfort food.

Hara Dhania Cholia

Hara Dhania Cholia is made using chickpeas or green chana typically found in Northern India. Cholia is the preparation of Sabzi using different varieties of green chanas and many vegetables. Other ingredients used in making the Cholia are turmeric, chili powder, onions, tomatoes, and coriander powder. It is such a rare dish of Haryana best served with Rotis or Rice.

Mixed Dal

Mixed Dal is good in both ways, one for the health and the other in taste. Because of the presence of various Dals, it is rich in proteins making it quite a healthy recipe. The Dals are cooked with a lot of spices and dollops of ghee. The Dals are first boiled and then crushed to maintain the texture and taste of the dish. The rich texture comes with the mashing of the mixed Dal. Most people like to have it with Plain Rice or Roti.

Singri Ki Sabzi

Singri Ki Sabzi is prepared using the dried desert beans found commonly in Northern India to cook this utterly delicious dish. The stir fry beans are soaked in water overnight to regain the texture of the beans. They are again boiled in saltwater for about 15 minutes. The preparation requires the use of spices along with amchur and berries. The dish is both sweet and salty, making it a perfect snack. A yogurt is also an option for adding it to the dish.

Mithe Chawal

Mithe Chawal, also known as sweet rice is made using Basmati Rice, ghee, sugar along with some saffron and cardamom. The Basmati Rice has to be soaked in water for some time to retain the texture of the rice. Basmati Rice is best grown in Haryana, hence the dish. It is one of the must-try dishes in Haryana.

Bajara Khichdi

Khichdi is a very common item found in every part of India but the use of Bajra instead of rice in this Khichdi makes it unique from the rest. The Bajra is soaked overnight for the preparation of the dish. The Bajra and Moong Dal are prepared together in a pressure cooker by adding in all the spices. Eating bajra is very good for health and so this dish is loved in Haryana. For those who wish to lose weight, Bajra Khichdi is one option worth trying.

MethiGaajar

MethiGaajar is a spicy dish made by adding a little sweetness to it. Methi and Gaajar are used for preparing the dish using many spices to make it delicious. Garam Masala, Salt, and a pinch of sugar are used. It is a Sabzi and can be served with Roti or rice.

Malpua

Malpua is sweet pancakes but in the Indian version. They are made fluffy and served hot. Malpua is made using a lot of ghee and the garnishing is done with dry fruits or cream. Rabri on top of Malpua works wonder.

Kachri Ki Chutney

Kachri Ki chutney is very much famous in Haryana. The Chutney is made using Kachri found and grown locally in the state itself. It looks like the cucumber from the inside and watermelon from the outside. Spices, yogurt, garlic, and onions are used for making the chutney.

Bathua Raita

Bathua Raita is quite refreshing and good for the health at the same time. The Bathua leaves are anti-oxidants, really good for the health. It is rich in vitamins. Various ingredients like cumin powder, salt is red chili powder makes this dish possible. The addition of yogurt adds to the tanginess of the dish. Raita is the perfect accompaniment with Biryani.
